This rich yet delicately flavoured long grain and fluffy rice preparation is definitely going to be a crowd pleaser. SAFFRON GREEN PEA PULAO Ingredients A large pinch of saffron
½ cup green peas
1½ cups Dawaat Pulav Basmati Rice 1½ tbsps ghee 5-6 black peppercorns
3-4 green cardamoms
1 inch cinnamon stick
1 bay leaf
2-3 green chillies, slit
1 large onion, thinly sliced
Salt to taste
Chopped fresh coriander leaves for garnish
Raita to serve
Papad to serve Method 1. Wash Dawaat Pulav Basmati Rice with sufficient water for 1-2 times and soak in sufficient water for 30 minutes to 1 hour. Drain and set aside.
2. Heat ghee in a deep non-stick pan, add black peppercorns, cloves, green cardamoms, cinnamon stick and bay leaf, sauté till fragrant.
3. Add green chillies, onion and saffron and sauté till the onion turns golden brown. Add rice and sauté for a few seconds.
4. Add salt, green peas, and 3 cups hot water and mix, cover and cook for 10-15 minutes. Switch the heat off and allow to rest for 5 minutes.
