A sweet, extremely aromatic and very tasty rice cooked with beautiful carrots and sweetened with the flavourful jaggery. GAJAR AUR GUD KE CHAWAL Ingredients 4 medium red carrots, grated
1 cup chopped jaggery
1 cup Basmati rice, soaked for 30 minutes and drained
4 tbsps ghee
1½ tsps fennel seeds
2 green cardamoms 8-10 cashew nuts
10-12 dried coconut slices
2 tbsps raisins

Fried coconut slices for garnish Method 1. Heat ghee in a pressure cooker. Add fennel seeds, green cardamoms and sauté till fragrant. Add cashew nuts, dried coconut and sauté till golden brown.
2. Add the carrots and sauté for 1 minute. Add raisins and mix well. Add rice, jaggery and mix well.
3. Add 1 ¾ cups water and mix. Cover the cooker with a lid and cook on high heat till 2 whistles are released. Lower the heat and cook for 5 minutes.
